I found the rat for cooking recipie close to Koslahki in obsidian rest (52,26) clicked on a semi hiden cheese.
he despawned from bag after 10 mins but was able to pick him up on the same spot.

When you're still on it, finish your old Zskera Vault Ratto della Ricetta negotiations for Pagina di Ricetta Strappatas or delete the Rat item. This seems to be the only old Recipe Rat interaction that may block progressing on the new one. I tried with characters who didn't acquire the Riceratta: Uova Diabolicamente Piccanti or never met the Zskera Vault Recipe Rat and nothing was hidden.
If you haven't yet, learn Cucina delle Isole dei Draghi (later, skill 50 will be mandatory to learn the recipe for the soulbound Formaggio di Beneficenza)
Purchase 20x Provola Stagionata (or more, you'll need more for cooking later)
Head to Caverna di Zaralek's Obsidian Rest on the Isole dei Draghi and interact with Groviera Squittente in a supply crate at /way #2133 52.43 26.82 Squeaking Swiss
(make sure Step 1 & 2 are done, otherwise the cheese won't be visible)
To help people who went there unprepared, on your very first interaction with Groviera Squittente you will receive 1x Provola Stagionata (flags hidden quest complete) on top of the Ratto della Ricetta that hops into your bags.
As long as you have the Ratto della Ricetta in your bags, it will consume 1x Provola Stagionata every ~3min and scurry away when there's no cheddar left.(unless you've acquired all recipe scraps, Squeaking Swiss will be visible again when you lost the Rat)
Every 5min you can now Servilismo before the Recipe Rat (by using the Ratto della Ricetta) to get a random number of Pezzo di Ricetta Strappata.
When you did acquire 30x Pezzo di Ricetta Strappata this way, the rat will eventually escape forever, but you can now Unione Frammenti di Ricetta to get the Riceratta: Formaggio di Beneficenza.
Learn the recipe, and get all the ingredients needed (which is quite a "ride") to cook 50x Formaggio di Beneficenza.(depending on your cooking skills this will take up to: 50x Provola Stagionata , 20x Formaggio Aspro e Piccante , 10x Formaggio dello Zocalo , 10x Lingotto d'Oro)
Travel the world to find Rats (literally critters with "Rat" as their names), target them, and use the Formaggio di Beneficenza to complete your Il dono del formaggio achievement and eventually be rewarded with Roland.
Patch 10.1.5 addition: When you summon Roland on a character with Cucina delle Isole dei Draghi skill 50 (and at least one of the recipes unlearned), our befriended Recipe Rat will now train them the recipes for Uova Diabolicamente Piccanti and Formaggio di Beneficenza without needing to locate him again in Zskera Vaults or Zaralek Cavern.

He was created, operated and voiced by David Claridge, who had previously designed and operated Mooncat, a puppet in the Children's ITV television programme Get Up and Go!

Besides Roland Rat (a British television puppet character), Roland is a reference to the rat Remy from the Ratatouille movie who is interested in cooking.
You can often find Remy with a chef hat in the pictures.

If you are farming the 50 rats I highly recommend you the Dalaran Ruins in Hillsbrad. Tons of rats, almost nobody here to farm since everybody camps around in Tirisfal Glades

RAT NOTES (ROTES):

The rats inside instances (like The Culling of Stratholme) cannot be fed cheese.
They must be named "Rat" - no Stormwind Rats or Frostfire Rats.
A target macro can cause issues - if you do want to use a macro, I suggest a mouseover use macro.
It's okay if the rats following you go away. Your count won't go away.
If you do go for Tirisfal Glade as an Alliance, you can get the Brill rats if you've PARTIALLY completed the Return to Lordaeron questline, and still have a disguise on in Brill. Alternatively, if you're 70 and finished the questline already, almost all the Brill NPCs are 30 or 60 except for the Flightmaster...
The progress is technically across Account, but is this something you really want to do on multiple toons?

Just a note. You cannot give them to active battle pets. Look for the rats that cannot be pet battled.

There are 10 rats really close together in Shattrath.
/way 49.00, 19.00

Go there first while in warmode. Feed all 10 rats the cheese. Turn off warmode. Feed the rats in the warmode-off phase the cheese. Go back to Stormwind/Org turn warmode back on. Repeat.
The rats have about a 5-10 min respawn timer. So this will take about 30 mins.
