Things you should know:

You can only get five Frammenti di Minerale Iridescente and one Minerale Iridescente per character per week. Resets with the normal weekly reset.
You can only get a certain amount of Frammenti di Minerale Iridescente, and the remaining number you can still get for the week can be seen in the profession window when selecting this entry (just called Iridescent Ore) under the section called Appendix I - Boundless Knowledge, it will show as the last line of text on the right. Resets with the normal weekly reset.
All nodes can drop the Frammenti di Minerale Iridescente, including elemental nodes, Titan-touched and Infuriated nodes.
Minerale Iridescente is essentially the last Frammenti di Minerale Iridescente you can get for the week. So when you get the Minerale Iridescente, that means you will no longer get any Frammenti di Minerale Iridescente or Minerale Iridescente on this character for this week.
Primal nodes drop the Pietra Caricata dagli Elementi.
Molten nodes drop the Campione di Minerale Riscaldato.
Hardened nodes drop the Pezzo di Pietra Implacabile.
There appears to be no weekly limit on Pietra Caricata dagli Elementi, Campione di Minerale Riscaldato or Pezzo di Pietra Implacabile, though they have a significantly smaller drop chance compared to Frammenti di Minerale Iridescente and likely do not drop from Titan-Touched, Infuriated, Rich and normal nodes.
Pietra Caricata dagli Elementi, Campione di Minerale Riscaldato and Pezzo di Pietra Implacabile all seem to share the same journal entry in the profession window, that being the entry for Pietra Caricata dagli Elementi.

Some guildies linked me this WeakAura that tracks all the weekly tasks and items available to you.

It's super helpful, easy to use and if you don't wish to see the lists on your UI all the time, you can keep a weapon in your inventory that is set to trigger the display of the WeakAura.

This will make the lists visible only with that weapon equipped.

It even has event timers for the Tuskarr feast, siege on Dragonbane Keep and the elemental chest events.
