A mace is a simple weapon, normally just a stick with a heavy head to smack your foes with (as opposed to slicing them apart like you do with sharp weapons). The head of a mace is usually symmetrical so you can strike an equally powerful blow however you hold the mace. This differs from for example hammers. Maces can be made from any material, like wood, stone or metal.

In Wow, a mace is basically just any object you can hit with that isn't one of the other weapon classes (swords, axes, staves, etc). It's one of the two "blunt" melee weapons, the other being staves (and swords, axes and daggers being sharp). This differs from the regular definition, because in Wow weapons like clubs, truncheons and hammers are classified as mace too.

Maces in Wow have different uses. One use is for melee combat. In melee combat, ane handed maces are wielded mostly by Rogues (and in Cataclysm again by Warriors who decide not to spec into Titan's Grip). Two handed maces are wielded by Death Knights, Paladins, Warriors and Druids.

Another use is for casters. In this case, it's more like a ceremonial mace: an ornamented staff. Caster maces are normally one handed and feature stats like spell power, intellect and often mp5.

The final use is specific to Wow. Most weapons or other wieldable objects are classified as maces, like shovels, branches, bones and even items like mugs and meat.
