I came here looking for ratios, but ended up finding a more useful table on the Essence of Torments comments by Osullivan. I'm posting it here in hopes that it helps others looking for the same info I was:

i just found the best spot for mining oxxein ore. when you are doing Maldraxxus and you get to the end of the storyline where the house of chosen is all dead and the quest you get is to go into the maw. if you stay in the house of the chosen and run around road on the top portion of this area I found 4 mines that constantly respawns and there is no mobs to kill at all. I mined a total of 50 mines and 22 of the were rich. in about 45 minutes this is what i mined:

444 oxxein
24 elethium ore
36 shaded stone
57 porous stone

Based on the info from mirgraw, I decided to venture into the House of the Chosen area in search of oxxein ore and it was a good decision. The following assumes you have acheived riding in Shadowlands.

I did a circuitous route (you can skip the upper area & the arena where Mortanis spawns, as no veins spawn in either area) and found several veins. It was almost all oxxein with the occasional elethium spawn and at least half of the oxxein were rich ones (10-15 pieces). I just repeated the route several times as more veins would spawn with each pass. The veins weren't always in the exact same spot each pass, but there's probably a dozen or so spots where they can spawn, as you'll see if you go there. I was on a druid in flight form, but you still shapeshift out when mining so I still had to be cautious. But even so, I was always able to position myself so as not to aggro nearby mobs. The one exception, of course, are flying mobs. Even those can be easily avoided, but you can always pretty easily kill them as they aren't elites. Only precaution I would suggest is to have the Comfortable Rider's Barding in your mount equipment slot to avoid getting knocked off your flying mount into the middle of a pack of elites. I went to try and get a little over a hundred pieces and ended up getting well over 300 in just over a half hour. Hope this is helpful.

EDIT: You also need to be @ lvl 60 or you will most likely aggro nearby mobs to the severe detriment of your health.

***In short***! - Almost every uncommon ore has the same chance of giving you an essence!
Every ore has a 0.066 to 0.068 chance to yield one essence
This mean it take roughly 15 ore (a.k.a 1 ore divided by 0.067) to get one essence

Over the past, almost a year, I've kept a spreadsheet of my major prospecting sessions. I have the data form roughly 275,000 ore that's generated roughly 18,500 essence. I've kept this data and analyzed them with descriptive statistics to report the following.

My data is almost exclusively:

From: (Minerale di Solenio - Minerale di Oxeina - Minerale di Fedrio - Minerale di Peccavyr)
To yield: (Essenza del Valore - Essenza della Servitù - Essenza della Rinascita - Essenza del Tormento) respectively

The complicated answer:

The only ore that has a parametric outcome (i.e. will AVERAGE 1 essence per 15 ore) is Minerale di Peccavyr
The other three, Minerale di Solenio - Minerale di Oxeina - Minerale di Fedrio, are nonparametrically distributed, which mean that a MEDIAN of 15 ore gets you one essence

I'm a big fan of stats if you can't tell! So what does this complicated answer mean?

When you're trying for just a bit of essence (Maybe < 100 essence from < 1500 ore)

If you're trying to get Essenza del Tormento, you can roughly times the amount of essence you need by 15, buy that, and be regularly pretty close to what you want! Some times you get a bit more, maybe a but less, and that all seems to make solid sense. It has a normal bell curve right over 15 ore to get one essence, and it doesn't seem super crazy when you're a bit short or have a bit extra.
If you want less than 100 Essenza del Valore, Essenza della Servitù, or Essenza della Rinascita, good freaking luck! You'll end up with wildly too few or wildly too many all the time. The MEDIAN or the MOST times you really end up needing 15 but who the heck knows!

When you're trying for just a bit of essence (Maybe > 100 essence from > 1500 ore)

Larger sessions will end up neutralizing a lot of this strange variance. So if you want prospect a ton of ore for a ton of essence, all you need to estimate is a 15:1 ratio!
What's a ton? Roughly the quantity above or the amount of time between patches in Shadowland ;)
I tend to prospect 3000 ish ore a time with really reliable results
